Two models for the promotion and development
of chocolate in regions with tourist use in Latin
America and Europe are analyzed: Mexico and
Spain. Through a qualitative approach based on
a comparative case study and the application of
ethnographic techniques, the parallels and differences between the two were documented to
identify how gastronomic tourism is promoted and
developed in contexts with similar characteristics,
but also with strong contrasts that reveal differentiated forms of tourist activation of resources and
their promotion
